Japan Airlines to Introduce New Spring Menus on International Flights

Featuring Highly Acclaimed Chefs to Offer an Exclusive Inflight Dining Experience

Japan Airlines (JAL) today announced new spring menus on its international flights from March 1, 2019. Highlights include a new healthy and fulfilling business class meal created by a Michelin 2-star chef, the return of AIR Japanese Soba Noodles Tsuta on long-haul international routes, and the introduction of scrumptious baumkuchen snacks for Business Class customers.

Welcoming a New Star - Chef Shinobu Namae, Owner of L'Effervescence
Customers departing from Japan will enjoy a European inspired cuisine on mid to long-haul Business Class flights, supervised by Chef Shinobu Namae.

After Chef Namae completed his training in well-known restaurants in Japan and overseas, he opened L’Effervescence in 2010 in Nishiazabu, Tokyo. The chef is known for serving delicious healthy meals that satisfy the palate while keeping customers fulfilled.

Welcoming a New Star – Chef Sota Atsumi, Owner of MAISON
After working as the chef at Le Clown Bar, a 100 year-old restaurant in Paris, Chef Atsumi plans to open his own restaurant in June 2019. Chef Atsumi carefully brings out the best flavor of each ingredient based on the concept of use everything, waste nothing. Customers departing from Paris can enjoy this limited time menu when traveling to Japan.

Chef Atsumi traveled to France at the age of 19 and studied at Troisgros, Stella Maris, and other known restaurants. In 2014, he became the opening chef after the renewal of the 100-year old Le Clown Bar. He was awarded the Best Bistro in France by Le Foding, the most popular restaurant guide in France. Chef Atsumi plans to open MAISON in June 2019.

Main: Beef cheek with simmered chile-anchovy sauce, celeriac puree / Scallops and squid ink risotto
Duck confit cannelloni white asparagus and aligot (First Class only)
Side: Mozzarella burrata with beets, salad with strawberry and hibiscus sauce
Chilled potato soup / Galette with pork belly confit, salad with mullet roe (First Class only)

New Inflight Meals on Hawaii Route
Fumiko Kono and Shinobu Namae, star chefs for JAL BEDD SKY AUBERGE, will collaborate and produce new menus on flights to Hawaii.

AIR Series - Japanese Soba Noodles TSUTA
The 31st edition will feature AIR Japanese Soba Noodles TSUTA. JAL is reintroducing the exclusive meal produced by TSUTA, a one-star restaurant in Michelin Guide Tokyo 2019. Mix the noodles with a special sauce made from truffle and chicken oil and enjoy!

Effective Period: from March 1, 2019 to May 31, 2019
Applicable Class: Premium Economy and Economy Class

NEW DONBURI Menu on select flights from Europe
Savory rice bowls will be served on select flights from Europe. The menus were original ideas created by JAL`s chefs using seasonal ingredients.

From Paris and London to Tokyo (Haneda)
From Frankfurt and Helsinki to Tokyo (Narita)

Helsinki route features Finland pork with vegetables/ginger and the Frankfurt route will feature pork.
(* the word `DON` means rice bowl in Japanese)

Baumkuchen Now Served in Business Class
The scrumptious cake will now be available at our self-service bar, where our customers can select and enjoy mid-flight snacks.
